Smart Catering Expands from Trains to Stations

The digital transformation of railway catering is extending beyond the train itself. New service models are connecting station restaurants, digital ordering platforms, smart equipment, and onboard delivery to create a more integrated passenger dining experience.

Automation in Station Catering

At Beijing South Railway Station, a newly opened Chinese restaurant uses automated cooking equipment including cooking robots, an automatic rice cooker, and automated grilling equipment. Standardised ingredients are loaded into the machines, while cooking parameters such as temperature, stirring, seasoning, and cooking time are controlled automatically. This model illustrates how automation can support consistent food preparation while improving kitchen productivity in high-volume transport environments.

Greater Food Traceability

Digital tools are also increasing transparency in food preparation and sourcing. Customers can access supplier information through QR codes and, according to the source material, view live kitchen operations through an app during operating hours. These technologies create additional visibility across food sourcing and preparation processes.

Connecting Station Catering with Railway Platforms

China Railway's 12306 platform already allows passengers on selected routes to order food from restaurants at stations along their journey. Orders are prepared in advance and delivered to passengers when the train reaches the relevant station. As station catering, onboard ordering, and digital passenger platforms become increasingly connected, the distinction between "station food" and "train food" is beginning to disappear.

The result is a broader railway catering ecosystem in which digital platforms connect kitchens, stations, trains, and passengers throughout the journey.
